I don't really play the game any longer, nor did I ever play Protoss a lot, but I got to say I don't understand the appeal behind blink openers in the current game. It seems like 95% of the time it does absolutely nothing, but there must be a reason for doing it because some players keep opening with it.
The only thing I can think of is it is a way to avoid the phoenix vs. phoenix games. The blink player knows he isn't going to get anything done with it, but he also avoids the game spiraling into a phoenix arms race if he had opened with stargate.
Does anyone know a better answer? Is blink openers a thing on ladder or something?

Im in the same boat as you as far as past/current time spent playing. But my take on it is that its very important for these players to have a wide range of openers, because everyone is going to be studying your vods.
And if you are predictable, especially in pvp, then you wont get very far.
During IEM Katowice Tod was mentioning how every time a toss opened DTs in pvp they lost, but all of the players kept doing it. I think its all part of the same mindset of being as unpredictable as possible.
And finally, ive seen some 4gates coming back in to the meta now that the mama core is gone, and blink can be useful for holding that and other forms of early aggression, while giving you a tech lead counter attack potentional if you defend
